Beef cutlets with vegetable stuffing

Ingredients:

For the Beef Cutlets:

  • 4 beef cutlets (about 1/2 inch thick)
  • 2 tbsp olive oil
  • Salt and pepper to taste

For the Vegetable Stuffing:

  • 1 tbsp olive oil
  • 1 small onion (chopped)
  • 1 bell pepper (red or green, chopped)
  • 1 cup mushrooms (chopped)
  • 1 cup spinach or kale (chopped)
  • 2 garlic cloves (minced)
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/2 tsp dried thyme
  • 1/2 tsp dried oregano
  • Salt and pepper to taste

Instructions:

1. Prepare the Stuffing:

  • Heat 1 tbsp olive oil in a large skillet over medium heat.
  • Add the chopped onion and bell pepper. Cook until softened, about 5 minutes.
  • Add the mushrooms and cook until they release their moisture and become tender, about 5 minutes.
  • Stir in the chopped spinach or kale and cook until wilted, about 2 minutes.
  • Add the minced garlic and cook for an additional minute.
  • Remove the mixture from the heat and let it cool slightly.
  • Stir in the breadcrumbs, Parmesan cheese, dried thyme, dried oregano, salt, and pepper.

2. Prepare the Beef Cutlets:

  • Preheat your oven to 375°F (190°C).
  • Place the beef cutlets between two sheets of plastic wrap or parchment paper.
  • Use a meat mallet or rolling pin to gently pound the cutlets to an even thickness, about 1/4 inch thick.
  • Season both sides of the cutlets with salt and pepper.

3. Stuff and Roll:

  • Place a portion of the vegetable stuffing in the center of each cutlet.
  • Carefully roll up each cutlet, securing the stuffing inside. You can use toothpicks or kitchen twine to hold the rolls together if needed.

4. Sear the Cutlets:

  • Heat 2 tbsp olive oil in a large oven-safe skillet over medium-high heat.
  • Add the stuffed cutlets and sear them for about 2-3 minutes per side, or until browned.

5. Bake:

  • Transfer the skillet to the preheated oven.
  • Bake for 20-25 minutes, or until the beef is cooked through and the internal temperature reaches 145°F (63°C).

6. Serve:

  • Remove the toothpicks or twine from the cutlets.
  • Serve hot, garnished with additional parsley or Parmesan cheese if desired.
