Ingredients:
For the Beef Cutlets:
- 4 beef cutlets (about 1/2 inch thick)
- 2 tbsp olive oil
- Salt and pepper to taste
For the Vegetable Stuffing:
- 1 tbsp olive oil
- 1 small onion (chopped)
- 1 bell pepper (red or green, chopped)
- 1 cup mushrooms (chopped)
- 1 cup spinach or kale (chopped)
- 2 garlic cloves (minced)
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1/2 tsp dried thyme
- 1/2 tsp dried oregano
- Salt and pepper to taste
Instructions:
1. Prepare the Stuffing:
- Heat 1 tbsp olive oil in a large skillet over medium heat.
- Add the chopped onion and bell pepper. Cook until softened, about 5 minutes.
- Add the mushrooms and cook until they release their moisture and become tender, about 5 minutes.
- Stir in the chopped spinach or kale and cook until wilted, about 2 minutes.
- Add the minced garlic and cook for an additional minute.
- Remove the mixture from the heat and let it cool slightly.
- Stir in the breadcrumbs, Parmesan cheese, dried thyme, dried oregano, salt, and pepper.
2. Prepare the Beef Cutlets:
- Preheat your oven to 375°F (190°C).
- Place the beef cutlets between two sheets of plastic wrap or parchment paper.
- Use a meat mallet or rolling pin to gently pound the cutlets to an even thickness, about 1/4 inch thick.
- Season both sides of the cutlets with salt and pepper.
3. Stuff and Roll:
- Place a portion of the vegetable stuffing in the center of each cutlet.
- Carefully roll up each cutlet, securing the stuffing inside. You can use toothpicks or kitchen twine to hold the rolls together if needed.
4. Sear the Cutlets:
- Heat 2 tbsp olive oil in a large oven-safe skillet over medium-high heat.
- Add the stuffed cutlets and sear them for about 2-3 minutes per side, or until browned.
5. Bake:
- Transfer the skillet to the preheated oven.
- Bake for 20-25 minutes, or until the beef is cooked through and the internal temperature reaches 145°F (63°C).
6. Serve:
- Remove the toothpicks or twine from the cutlets.
- Serve hot, garnished with additional parsley or Parmesan cheese if desired.
